Hotel Luna’s Sapsapuriket

Kicking modesty aside and based on my sense of taste’s practical background of experience, I think I have reason enough to say that I have the authority to judge if a Dinuguan is excellent, atrocious or just passable. Dinuguan is a savage Filipino dish known as pork blood stew!

I am saying this because I know what an excellent Dinuguan tastes like.  I just happen to be the son of the best Dinuguan maker on the planet.  Nengkoy’s Dinuguan is so delicious, this ferocious-looking dish would often be one of the most requested part of our family’s handa (food served during special occasions).

My recent visit to the City of Vigan in Ilocos Sur exposed me however to a different variety of a Dinuguan.  Locals call it Sapsapuriket!  It is a blood stew variety in which the meat is not pork but the tasty cage-free native chicken. And the blood used to make the stew was not pig’s blood but from the fowl’s fluid that runs through its veins and arteries (Hahaha!).

I was fortunate that my first time eating of the savage Sapsapuriket was in Comedor, the restaurant outlet of the well-esteemed Hotel Luna in Vigan.  One would know that Hotel Luna’s Sapsapuriket is special, for it is served with potato cracklings instead of the usual rice. The hotel’s style of pairing the dish with potato chips was actually a success.  Texture on the palate plus tangy flavor of the pair was something to praise about!

I am writing about Sapsapuriket, the Dinuguan of the north, so I guess, this dish served by Hotel Luna’s Comedor is something to praise and look forward to when in Vigan.

My NYC Bagel Exploit

Prior to leaving for NYC I know already that my maintaining under ketosis and keeping a keto diet is doomed.  That is why I gave my delicious in-ketosis body a break.  I ate what is supposed to be eaten in NYC! 

Since being given by fate the opportunity to revisit NYC which for me is such a stupendous blessing, not eating the classic NYC staple could therefore be deemed like a mortal sin.

Because of this, I obliged and dragged myself on eating the classic New York bagel.  They say that NYC bagel is strangely incomparable because of the water chemistry of this urban zone.  And what seem to be remarkable with my bagel-eating exploit is that I did not go to the usual, popular, well-published, most-recommended and tourist-infested café or store that offers the best bagel in NYC.  Besides, every New Yorker seem to have their respective strong opinion on who serves the best NYC bagel.

 I then instead chose a guileless, un-fussy and archetypal type of a deli and mini-grocery store.  At one quiet neighborhood in Brooklyn, there sits and operates Longevity Natural Gourmet Market.  And to complete the complex puzzle of my NYC adventure, I decided to be a traditionalist on this exploit.  This prompted me to order for a no-frills kind of a bagel.  I simply ordered a classic variety with cream cheese on it.

 Longevity’s bagel has no food coloring, not fancy and thankfully was the traditional kind of a bagel.  It nevertheless was impressively squishy inside and remarkably crisp crust on the outside, which clearly defines the classic kind of an NYC bagel. It is soft-on-the-inside and lacquered-on-the-outside!

This is to confirm then that bagels in this part of the globe are indeed unmatched and should really be something to be gratified with.  Now I can really say that I am and was indeed in New York City.  And a piece of bagel made it further complete.

Piniritong Galunggong The Dashing Version

While I was growing up, there was one fish that has politically been used as a benchmark in terms of determining my country’s economic inflation rate  and the people’s purchasing power.  It was a Filipino staple that resulted to having the first female president in Asia and the Time Magazine’s Woman of the Year awardee.  It was the increasing price of this measly poor-man’s fish that was used to ignite in toppling a dark authoritarian regime that resulted to the triumph of a peaceful people power revolution.

This fish was the mundane and inglorious Galunggong (known in the US as the Round Scad Fish).  This fish is so cheap, so common and so trivial you will never see this served as part of the menu in any grand or special Filipino banquet feast.  Some Filipino folks would not even eat it because they consider it as the fish of the poor and the low-class.

But the sordid, meek and lowly fish seem to have an ally in revamping its unfortunate and underprivileged image.  It is the 35-year old Filipino restaurant called Bistro Remedios. 

I think Bistro Remedios is the only prime-quality restaurant in the metro that carries a Galunggong dish in the menu.  I have yet to know or encounter an equally ingenious restaurant of the same caliber that serves this variety of fish.

Bistro Remedios serves Galunggong and they simply call it Piniritong Galunggong.   I recently got an interest of trying one and it was one surprisingly beautiful dish that was served on my table.

I consider Piniritong Galunggong to be the chic and dashing version of this common fried fish.  It is actually a complete meal.  It is served with a special rice cooked in coconut milk and also comes with the savory-flavored Filipino shrimp paste mixed with crispy tiny anchovies. 

The presentation, the plating and the big portion definitely exceeded my expectations.  Those fresh sliced tomatoes and banana leaf bedding definitely added beautiful colors to what could have been a plain looking dish.  The sautéed shrimp paste with anchovies was packed with flavors while the special coconut milk rice was a real big surprise to the palate.

The Galunggong fish was definitely the highlight of this dish.  It was crisp, meaty and flavorful.  And for those who hate eating bony fish, Bistro Remedios’ kitchen painstakingly got rid of the fish bones!  The fish served were boneless!

Bistro Remedios (who was the inventor/creator of the now-very-famous Binukadkad Na Plapla which almost all Filipino restaurants seem to serve now) definitely did a great job on introducing and carrying Galunggong in their menu. 

Chomping on the fish seem to brought back childhood memories and of living simple and joyous lives in the past.  This dish was a definite glorious gastronomic experience!  And after having my last bite, I was already planning on when to order it again.

Beef Ninja is a Pares In Disguise

About two weeks ago, Nengkoy, I and my family had an early dinner in one of the posh and popular Filipino-fusion cuisine restaurant just beside the lobby of the deluxe and swanky Conrad Hotel (hahaha! I refuse to name the restaurant). It was my first time tasting Pares in that dinner.

Pares is the Filipino’s common reference to a Braised Beef Stew usually paired with garlic fried rice and a bowl of clear soup. Pares is a common dish served in carinderias (small local eateries) usually found along the side streets of Manila.

Since it was my first time, I don’t really have an idea how a good Pares tastes like. That is why I did not know if the version of the posh restaurant was way superior as compared to other Pares-es served in customary, regular and more economical carinderias.

My adventurous nephews however are more well-versed than I am in terms of the taste of Manila’s street food and cuisine. My nephews particularly Denden commented that the Pares served in Café Adriatico is way more delicious as compared to the version served in the restaurant we were having dinner at. He nevertheless commented that the food presentation by the posh restaurant was way more gorgeous as compared to the plain and simple Café Adriatico dish.

When I try to recall if Café Adriatico serves Pares, without batting an eyelash, I reminded Denden that Café Adriatico does not serve it. He then informed me that Café Adriatico’s Beef Ninja dish is actually a Pares disguised in a modest presentation and is called in a different appellation.

My other nephew Luis confirmed this observation and stated that indeed, Beef Ninja of Café Adriatico is a Pares dish. Both agreed that though it needs improvement in terms of food presentation, Café Adriatico’s Beef Ninja is among the top three Pares-es they have ever tasted.

This inspired me to order Beef Ninja when I had the chance to dine at the 40-year old Café Adriatico in their Malate, Manila branch. While doing some photo shoot of the dish, I wonder which came first in terms of evolution. Was it Beef Ninja of the 40-year old restaurant or was it Pares served in carinderias? I may not know the birth of Pares and how it really tastes like, I nevertheless savored the delicious flavor of one of the best Pares (in disguise) dish on the planet.

Ensalada Esmeralda & the Caveman in Me

My friends and colleagues know that I am not a salad person. While dining in restaurants, I frequently tease and ridicule friends who prefer having salads than the specialty main courses. I would often tell them that maybe they may be a goat or a rabbit in their past life. Plus, salads for me are not an effective meal. It may be filling but only for a short period of time.

I usually don’t understand how some people eat only salad for lunch or dinner because in my case, after about an hour, I am craving for something to chew and swallow. But the good side for salad-eaters on how I perceive them is that they seem to be more civilized, more refined and more sophisticated.

They are so unlike me who is a meat lover! For me, meat lovers are the total opposite of the very urbane and cultured salad lovers. I and the rest of the meat lovers seem to be more savaged, ferocious and brutal. I prefer chunks of animal carcass may it be grilled, broiled, fried or roasted. Because of this, I have always thought that in my past life I am a barbaric cave dweller during the prehistoric times who loved hunting animals for food.

But there’s one kind of salad that seem to convert me. It’s the Ensalada Esmeralda of Café Adriatico! Picture this, a bed of fresh greens with slices of crunchy apples and luscious oranges, savory almond flakes and dried cranberries dripped with generous amount of raspberry-yogurt dressing topped with chia seeds! It’s raw and it’s meatless yet I L.O.V.E. it!

I can no longer count the times I had Ensalada Esmeralda as my lunch. It is unlike other salads that is filled with grated odorous cheese or smothered with unhealthy mayonnaise or with robust repulsive vinegar dressings. This salad is something unique for it is on the fruity and sweet side. Having a sweet-tooth myself, I particularly love the sweet tangy taste and fluid texture of the raspberry-yogurt dressing!

The refreshing Ensalada Esmeralda, makes me now think that sometime in my prehistoric past I was the first caveman who converted from being carnivorous to being a fruitarian! And at this modern present time, Ensalada Esmeralda seem to have erased the deep-seated savaged caveman in me!

Tastes of Asahikawa

One unusual thing that I and my colleagues did in our most recent trip to Japan is that we decided to stay in a minimally advertised destination in Hokkaido.  Instead of staying in a more popular Sapporo or Furano, we decided to stay for 2 nights in a remote place called Asahikawa. 

And since there are limited tourist spots to go to (aside from going to a mall and a zoo), I and my colleagues decided to explore Asahikawa through its food.  Our first destination was the ramen house our hotel has recommended, the Ichikura Raman.

 Since Isahikawa seem to be popular with shoyu-based ramen (shoyu: Japanese soy sauce), I settled and ordered the Okhotsk Shoyu Ramen.  This ramen according to the menu is composed with unique Hokkaido ingredients like Namuro dried salmon flakes, Esashi dried herring and Rishiri kelp from Oumu.  I was really happy that Ichikura Raman was the ramen place our hotel has recommended.  And aside from their ramen, one surprising dish in this joint was their Gyoza.  It was one of the best gyozas that I have tasted!

A lot of people say that it would be a sin for a tourist in Hokkaido if he/she failed or refuse to try the Hokkaido ice cream.  This soft frozen dairy is one plain ice cream that is simply made of milk.  It has no fancy flavor, no fancy add-ons and no fancy flairs for an ice cream.  For me, its plainness makes Hokkaido ice cream remarkably exquisite and amazingly elegant.

Then, one of the highlights of our Asahikawa stay was the dinner at Jingisukan Daikokuya.  This restaurant is the top rated local-cuisine restaurant in Asahikawa as per Tripadvisor.  It is so popular people would have to wait and queue outside before they be given a table.  Specialty of the house was Hokkaido’s grill icon called Genghis Khan (also termed Jingisukan).

Like their sophisticated ice cream, Jingisukan is a must try in Hokkaido.  It is a unique style of yakiniku in which mutton and lamb are grilled on a convex skillet shaped like an upside-down bowl.  Since the meat are grilled over charcoal, we were surprised to see and experience the amount of smoke inside the popular restaurant.  We nevertheless did not complain because the smoke actually added up to the character and atmosphere of the establishment.

I personally prefer beef over lamb, but the marinated flavor and the stunning taste of the meat served to us gave me some second thought if I really do prefer beef over lamb. Genghis Khan was strikingly delicious!

Asahikawa may not be of the same level as that of Osaka, Tokyo or Sapporo where there are tons to see and marvel at.  Asahikawa nevertheless has loads of gustatory surprises that tourists can taste and talk about.

The Food at Apartment 1B

A friend learned that I dined at Apartment 1B of The Henry Hotel and suspected that the food must have been no good that is why I did not write or post about it in this blog.  But since now that I am writing about it, it only means that I indeed enjoyed the food that they served us.

The selfish in me actually wanted the restaurant of The Henry Hotel to be a secret, but since friends learned that I dined there with Nengkoy and family, might as well spill the sumptuous beans!

I have nothing bad to say about the warm service, the appealing food and the relaxing ambiance.  The food at Henry Hotel actually was a big positive surprise!  I never expected it to be so good.  Their well-presented dishes were amazingly fine and delicious.

I have nothing but alluring and charming praises for the food served at Apartment 1B.  I will surely be back!

A Vlogging Suggestion: Try Knock Out Kare Kare

Vloggers and bloggers living comfy life outside the Philippines but has been here in my country seem so fascinated with Jollibee, the number one fast food chain here in the Philippines. Every foreigner who’s been here in the Philippines never seem to fail to chronicle their first Jollibee Chickenjoy or Yumburger experience. Youtube videos of vloggers trying Jollibee for the first time are so plenty, it makes me bored.

Every foreigner seem so entranced as if their visit, adventure and experience here in the Philippines would not be complete if they fail to dine at Jollibee. These foreigners don’t realize (I guess until they have tasted Chickenjoy) that there really is nothing unique and extraordinary with the palatal offering of this fastfood staple. Kudos to the powers of Jollibee’s advertising campaign and marketing team.

I really have nothing against the giant Jollibee, except for the worst form of spaghetti that they sell, but for me foreign bloggers and vloggers alike who plans to come and visit, should instead try for themselves a dish that is truly Filipino. It is named Knock-Out Kare-Kare.
Why then am I suggesting it?
First is because Knock-Out Kare-Kare is a fusion of two popular and authentic Filipino dishes, the Krispy Pata (deep fried pig trotters and knuckles) and the Kare-Kare (Philippine oxtail and ox tripe stew in thick savory peanut sauce). Therefore, having this dish is like experiencing two Filipino gastronomic experiences rolled into one.
Second is because Knock-Out Kare-Kare is not as creepy as that of the popular Balut or Dinuguan. A lot of foreigners have considered Filipino cuisine to be so fierce and ferocious. This is because of the scary Balut and the vicious looking Dinuguan. But in Knock-Out Kare-Kare, there really is nothing to be terrified about. The golden-brown crispy skin of the Crispy Pata teases you with the promise of juicy meat within. While the aroma and smoothness of the peanut sauce and vegetables of the Kare-Kare adds up to the anticipation that there is nothing to be scared about regarding the usually vicious Filipino cuisine.
Third, this amazing fusion and mingling of 2 Filipino dishes can be found in Abe, the leading Filipino restaurant here in the Philippines. I know Jollibee is all around the Philippines in which there really is no challenge at all on locating one, but the travel experience of trying to locate and finding your way to the best local restaurant of a country really adds up to some travel adventure in a foreign country. The experience is like being an Australian trying to locate the best Turkish restaurant in Turkey or a Japanese tourist trying to trace the location of the best Italian restaurant in Italy.
As of now, let me message all foreign tourists, vloggers and bloggers that chronicling your Jollibee experience is a tired format and exhausted routine. Try something more interesting and really more Pinoy. Try Knock Out Kare Kare for it will surely knock your wits off!

Khaoniao Mamuang: Best Thai Dessert

I can no longer count the number of times that I have posted in this blog that my favorite course in an entire meal would be the dessert.  The confectionery course has always been my main course!

When I was in Bangkok with my mom and sisters, we of course got to try Thai dishes.  I have always revered how uniquely sensual and remarkably palatable Thai dishes are.  But still, it is a simple dessert among all the striking Thai dishes that really makes my modest and artless taste buds happy.

I love Khaoniao Mamuang.  Don’t be fooled by how the words were spelled and how should it be read.  The best Thai dessert for me is simply known as Mango Sticky Rice!

I adore this dessert for it is uncomplicated, simple and straightforward!  No lavish implements are needed for its presentation; no rare, pricey and uncommon ingredient is need; no knotty and confusing procedures are required for its preparation; and, no intricate and confusing way of eating and enjoying it.  Yet the taste is so heavenly!

It was my fifth time in Bangkok about a week ago.  I may have failed to revisit some the beautiful and spectacular tourist spots of the city, but I never failed to eat, savor and enjoy the divine and blissful Khaoniao Mamuang!

Jamie’s Italian Bangkok

One epicurean highlight of me, my sisters’ and my mother’s adventure in Bangkok was the opportunity to dine at Jamie’s Italian.  It is a popular worldwide chain of Italian restaurants conceived and run by celebrity chef Jamie Oliver.  Thanks to cable TV my family knows who Jamie Oliver is.

This chain of restaurants has recently been in the news in which about a dozen of its branches scattered around the world are reportedly beleaguered and will soon be closing.  It is so ironic that it has yet to open a branch in Manila, yet branches in other spots on the planet are already closing.

So before Jamie’s Italian would completely dissolve and utterly disappear from the face of earth, me, Nengkoy and my sisters took the chance to savor some of its dishes.  My family love watching cable TV cooking shows (including that of Jamie Oliver’s) and now that there is an opportunity, we will no longer forever wonder how a popular celebrity chef’s creation actually taste like.

These are what we ordered…

Soup of the Day… pumpkin soup! This surprisingly passed the palate of Nengkoy whom I consider to be an authority when it comes to pumpkin soups.

Meatball Pappadelle (free-range pork & fennel meatballs in ‘nduja tomato sauce with olives, herby breadcrumbs, rocket and parmesan) this is sooo good…

Spaghetti Alla Norma (a classic sicilian pasta dish or aubergine, chilli & basil in rich tomato sauce) it’s vegetarian yet my personal favorite! 

Truffle Shuffle (white sauce, truffled salami, fontal, balsamic onions, free-range egg & black truffle) super savory!

Epic Chocolate Brownie (with proper chocolate sauce, salted caramel ice cream and caramelised popcorn) super yummy!

And after enjoying all these savory dishes, I wonder why a significant number of Jamie’s Italian branches around the planet are in the brink of closure.  Maybe it’s because taste buds of people around the world has mutated, regressed and had a relapse that it can no longer fathom, appreciate and recognize what good food is.

Good to know that the Bangkok branch stays strong and dynamic.  This is considering the fact that Thai people seem to be one of the most discriminating in terms of flavor, taste and palatal experience.  With the luscious taste and flavors we experienced at Jamie’s Italian Bangkok located at Siam Discovery, I hope that this chain remain for a long period of time for others with discerning taste to enjoy.
